10' Mexican flavoured soup

Super quick (10'!) Mexican flavoured soup, perfect for a summer night. I looooove Mexican food, who doesn't?

INGREDIENTS FOR 2 PERSONS

- Italian Tomato
- 200g red beans
- 1 red onion
- 1/2 yellow pepper
- A handful of cherry tomatoes
- 1/2 avocado
- Toppings: coriander, sour cream, some nachos, lime


PREPARATION

Cut the red onion and yellow pepper in fine long pieces. Heat up a pan on a medium level and fry the onion and pepper during 6-7 minutes. If it gets too brown, I sometimes add a little bit of water. For the final 2 minutes, add the red beans and Brouillon and remove from the heat when they are hot. 

While the onion and pepper are getting ready, cut the avocado and tomatoes in small pieces. 

Pour this into a bowl and top off with some sour cream, coriander, nacho and lime. Enjoy!
