Healthy Bolognese Soup

My man Miguel laughs with the fact that I could always eat a spaghetti bolognese and our Belgian version isn't even the real deal as Italians would make it (or as Seppe Nobels says: Belgonaise). But as I love this dish so much, I would like to make an ode to it with this healthy version of it (because you don't need that much pasta to feel fulfilled). Ready in 12 minutes!


INGREDIENTS FOR 2 PERSONS

- Italian Tomato Broth
- 150g minced meat
- 100g small pasta (ex. Dilatini)
- 1 small onion
- 1 celery stalk
- 1 carrot
- 1 garlic clove
- Basil (keep the stalks and cut them into small pieces)
- Toppings: basil leaves, olive oil and cheese

PREPARATION

 

Cook water (with salt!) for your pasta and cook the pasta according to the packaging. 

Fry the onion, carrot, celery, garlic and basil stalks for about 2-3 minutes on a medium high. 

Add the minced meat and fry for about 5 minutes until crispy caramelized. 

Add Italian Tomato broth and pasta (I usually add about 100ml of the pasta water as well, as it helps thicken a bit). 

Top off with basil, olive oil and cheese of your choice!
