Yellow Curry with cauliflower and chickpeas
This is the perfect dish when you want something tasteful but very easy and quick. This curry with chickpeas and cauliflower is ready within 15min. ! Full of good protein and fibers.
For 2 persons
- 1 Yellow Curry Coco
- 1/3 or 250g cauliflower, cut into small pieces (2 cm)
- 200g cooked chickpeas
- 100g noodles
- 2 shallots, cut into small pieces
- 1 garlic clove, crushed
- 1/2 tsp chiliflakes
- Neutral oil (ex. sunflower oil)
- Toppings: cilantro, red onion
Bake the shallots with garlic and chiliflakes in some neutral oil. Let it bake for about 3 minutes until the shallots are glassy.
Meanwhile, put a pan on the stove with water and let it boil.
Add the cauliflower and let it bake for about 5 minutes on a medium level. After that, add the cooked chickpeas.
To finish, add Yellow Curry Coco and let it simmer for about 5 min.
In the mean time, cook the noodles according the package.
Serve with cilantro, red onion and tadka (see other recipe).
