White bean soup with cheese toasts

This is just perfect. 
You need just a few ingredients and it can be made with leftovers, like old bread of small pieces of cheese you have left in your fridge. 


- Italian Tomato broth
- 175g white beans
- 2 white onion
- 2 garlic clove
- leftovers of different sorts of cheese (approximately 120g)
- 2 sprigs of thyme
- 2 big (old) bread slices


Start with heating up the oven at 180 degrees. 
Heat up some olive oil on a low heat and add garlic and onion. After a good 7 minutes, add the broth and beans. Let it simmer until it boils. 
Cut the bread in half, sprinkle with some olive oil and cover it with leftover cheese. Put this in the oven for 7 minutes. 

Pour the broth and beans in a bowl and enjoy your meal with some cheesy bread.
