Yellow Curry Mussels
I frequently make mussels as aperitizer, especially during summer times!
Mussel season is coming, be aware.
INGREDIENTS FOR 4 PERSONS AS APERO
- 1/2 Yellow Curry Coco
- 1 kg mussels
- lemon grass
- toppings: coriander, red pepper
- half of a courgette (optional)
Cut the lemon grass in long pieces and fry it on a high level for about 2 minutes. Add the mussels and Brouillon. Let it simmer until the mussels open.
Pour in a large scale and top off with some coriander, red pepper and fresh lemon grass.
Optional, you can grill some zucchini and put in on the plate to have that extra bite.
