Easy ramen soup with broccoli and cashew nuts

Very light meal soup, perfect as a lunch. 

INGREDIENTS FOR 2 PERSONS

- Miso Mushroom broth
- 150g broccoli
- 50g cashew nuts
- 150g noodles  
- 2 eggs
- Toppings: spring onion


PREPARATION

Boil some water for the eggs. Cook them during 6-7 minutes. Let them cool using water with some ice cubes and peel them. 

Boil some water to cook your noodles in. Cook them according to the packaging. 
According the cooking time, add the broccoli the last 4 minutes. 

Fry some cashew nuts until light brown. 

Boil Brouillon. 

Assemble everything in your bowl and top off with some spring onions.
